Dr. Mitchell, who was born in Jamaica, attended college in Canada at McGill University in Montreal. After graduating with a Bachelor of Science in home economics in 1963, she moved to New York to obtain a Master of Science in human nutrition from Cornell University in 1965. She remained at the school to earn a Ph.D. in human nutrition in 1968.
Armed with these degrees, Dr. Mitchell proceeded to spend a majority of her career with Washington State University in Pullman, Wash. She joined its faculty as an assistant professor in 1969 and advanced to associate professor in 1978. Dr. Mitchell continued in this position until her retirement in 2004. During her time at the university, she also worked as a nutrition scientist for the U.S. Department of Agriculture from 1980 to 1981. Additionally, she was acting chairman of Washington State University's Home Economics Research Center from 1981 to 1983 and assistant director of the Agricultural Research Center (Experiment Station) at Washington State University from 1984 to 1986.
Dr. Mitchell now resides in Florida, where she is able to focus on her hobbies of genealogy, music and writing. Her accomplishments were taken into consideration when she was chosen to be featured in the 40th through 42nd editions of Who's Who in the South and Southwest, the 32nd and 33rd editions of Who's Who in the World, and the 1st edition of Who's Who of Emerging Leaders in America.
