Dr. Labuza is a food engineer and an educator who celebrates more than 50 years in his professional field. Originally teaching at his alma mater, Massachusetts Institute of Technology (MIT), between 1965 and 1971, he was subsequently hired to teach food science and do breakthrough research at the University of Minnesota. During his tenure, Dr. Labuza also served as an associate dean of the graduate school and was honored as a distinguished teaching professor of food science and engineering.
A world-renowned expert on the kinetics of reactions related to loss in food quality, nutrient degradation, and pathogen growth and death kinetics, Dr. Labuza has been credited with assisting more than 48 mentees gain faculty positions around the globe, most of whom have proceeded to conduct research on reaction kinetics. He has also mentored many doctorate level students and visiting scientists. Dr. Labuza has also lent his expertise as a consultant and an expert witness to the food industry on numerous occasions.
Some of Dr. Labuza's research interests have included water activity, food stability, food safety, shelf life testing, and bioterrorism. In recent years, his research has been supported by grants from the Department of Homeland Security through the National Center for Food Protection and Defense, as well as through grants funded by the United States Department of Agriculture National Institute of Food and Agriculture. Additionally, Dr. Labuza has received grants from the American Egg Board, the Almond Board of California, the Dairy Research Inc., and the Minnesota Beef Council.
A prolific author, Dr. Labuza authored or co-authored 18 textbooks, including "Biotechnology of Food Processing" in 1986 and "Functional Food" with M. Schmidl in 2000. He has published 18 text books in the Food Science and Nutrition field and contributed 78 chapters to scientific books. His research group at the university has published an average of 6-10 research papers annually since 2010 in the Journal of Food Science, the Journal of Agricultural and Food Chemistry, the Journal of Analytical Chemistry, and several other international professional publications. Dr. Labuza was notably recognized by ISI (Institute for Scientific Information) in 2002 as one of the top six most highly cited scientists in the agricultural and food science arena, which was based on an evaluation performed over the preceding 20 years. His Harzing index is 81, which is in the unbelievable region. A Harzing h index of 81 means that he has 81 research papers that have been cited in 81 other refereed research papers. An alumnus of MIT, Dr. Labuza acquired both a Bachelor of Science in 1962 and a Doctor of Philosophy in 1965. While in pursuit of his degrees, he studied physical chemistry and, alongside a group of others from around the world, was able to develop an important food scientific thermodynamic paradigm, called 'water activity (aw) that teaches all the implications of the impact of water on the quality parameters leading to shelf life', for example loss of crispness. Water activity is an important principle that helped solve many problems within the field of food science, and later became the basis for Dr. Labuza. Work in this concept also earned him his inaugural role on campus as a research associate, which was funded by the U.S. Air Force and the US Military Natick Laboratory.
An elected fellow of the International Union of Food Science and Technology, Dr. Labuza is also a member and past president of the Institute of Food Technologists (IFT). The Institute honored him with a Babcock Hart Award in 1988, Food Engineer Award in 1995, Nicholas Appert Award in 1998 (The highest Food Science Award in the world) and Marcel Loncin Food Engineer Research Prize in 1998. Locally, Dr. Labuza chaired the committee on intercollegiate athletics at the University Minnesota between 1988 and 1992. He also served on many faculty committees in his Department of Food Science and Nutrition since 1971 and in his college (College of Food, Agriculture and Natural Resource Sciences (CFANS).
In 2005, Dr. Labuza was awarded a College of Human Ecology Advisory Council Award for Innovation and Mission Advancement. He received several teaching awards, including a University of Minnesota College of Human Ecology McFarland Outstanding Teaching Award in 2001, a University of Minnesota Academy of Distinguished Teachers Award in 1999, and an MIT Department of Nutrition and Food Science Outstanding Teaching Award in 1970. He was also named to his high school's hall of fame at Perth Amboy High School in New Jersey in 1992, received a Campbell Soup Company fellowship and two scholarships. A celebrated Marquis listee, Dr. Labuza has been featured in Who's Who in America, Who's Who in Science and Engineering, Who's Who in the Midwest, and Who's Who in the World.
