Ms. Sparks is renowned as a registered dietitian with more than 30 years of excellence in public health nutrition services. Her interest in dietetics began at a young age, and she attributes her early fascination to watching her family manage her brother's juvenile diabetes. Initially earning a Bachelor of Science in foods and nutrition from Kent State University in 1965, she subsequently completed a dietetics internship at Baylor University Medical Center in 1966. Ms. Sparks concluded her academic efforts with a Master of Science in public health nutrition at Case Western Reserve University in 1968.
Beginning in 1968, Ms. Sparks was employed as a nutrition consultant by the North Carolina State Board of Health which has since gone through a series of reorganizations under which she worked in the Division of Health Services. She served as a nutrition consultant in Maternal and Child Health until 1989 when she joined Nutrition Services as a regional nutrition program consultant. In 1995, she was designated as Field Services Branch head from which she retired in 1999.
Prior to her retirement, Ms. Sparks excelled as an adjunct clinical instructor for East Carolina University. She has served as president of the Wayne County Chapter of the American Diabetes association which celebrated her as Volunteer of the Year in 1985. She has been honored extensively for her work in public health, having received the Governor's Order of the Long Leaf Pine in 1999. She received the Member of the Year Award from the North Carolina Dietetic Association in 1988. Furthermore, Ms. Sparks formerly flourished as a president of the North Carolina Public Health Association, the North Carolina Dietetic Association and the Eastern North Carolina District Dietetic Association.
