Driven by his own curiosity, Mr. Chaize has always been attracted to the restaurant business. Particularly, he has harbored an interest in the behind-the-scenes aspects of how professional kitchens worked. After immigrating from France, he relocated to Los Angeles, where he had been initially hired as a dishwasher. Eventually, Mr. Chaize advanced into the position of a sous chef, learning much from fellow cooks in the industry during this time.
Mr. Chaize currently excels as a chef with, and the owner of, Nico's Pier 38. Over the years, he has been incredibly proud of building a successful business as an immigrant who worked his way up from kitchen positions to sous chef to the owner of a restaurant. Having utilized every opportunity in front of him, Mr. Chaize supervises more than 150 employees in his present positions.
For his exceptional efforts over the years, Mr. Chaize has received recognition as the Best Seafood Restaurant in the state of Hawaii and the Best Poke Bowl. He was also featured on the Food Network with celebrity chef Guy Fieri of "Diners, Drive-ins and Dives." Today, he maintains his professional affiliation with the Hawaii Longliner Association, Federal Noah and the Hawaii Seafood Organization. Looking toward the future, Mr. Chaize plans to continue building his business and eventually establish smaller restaurants in the area.
