In 2020, Ms. Kolkmann opened Dwarf Hollow Farmstead in Prattsburgh, where she puts her skills in animal and crop husbandry to commercial use, growing and selling heirloom vegetables, fruits and herbs without any aid from chemicals, pesticides or herbicides for the crops. She additionally refuses to use antibiotics with her poultry, which is also raised cage-free. She offers eggs, vegetables, fruits, herbs and fresh-roasted gourmet coffees, as well as soaps, botanical lotions, soy candles and fresh-baked breads. The Farmstead is open Friday through Tuesday, year round.
According to Ms. Kolkmann, she attributes her success to determination, her moral compass, her love of nature and her desire to improve the lives of others. In the coming years, she hopes for continued success with Dwarf Hollow Farmstead, to which she would like to add "glamping," a style of camping with amenities and, in some cases, resort-style services not usually associated with "traditional" camping. Ms. Kolkmann would also like to open a bed-and-breakfast and expand her dairy product line.
