Mr. Koep serves as the owner of Fendu Boulangerie, a European bakery in Honolulu. Established in 2009, he sells an array of naturally-made pastries, baked breads, croissants, gourmet pizza, sandwiches and more. In addition to baking, Mr. Koep oversees all daily operations and customer service, and is proud to have achieved such success through hard work and dedication.
Prior to becoming an entrepreneur, Mr. Koep worked at two different luxury hotels on the island of Lanai (for the first 10 years as an assistant pastry chef and for the last 8 years as an executive pastry chef). He also worked in a French restaurant, where he garnered additional expertise. During his tenure in the field, Mr. Koep was fortunate to work with many talented individuals from around the world. He was also honored to bake Bill Gates' wedding cake during the billionaire's stay as a guest in Lanai at the time.
As an extension of his work, Mr. Koep enjoys contributed to his local community by donating baked goods to such charities as Aloha Harvest and the Women's Fund of Hawaii. He also volunteers his time with the Food Service Career Forum at several area high schools. To support his professional career, Mr. Koep maintains his membership with the Bread Bakers Guild of America. A nonprofit organization, it is comprised of professional bakers and other leaders in the industry that are devoted to producing the highest quality baked goods. Mr. Koep's bakery has also been a member of the Better Business Bureau since 2018, during which time it has maintained an A+ rating.
Mr. Koep studied at the French Pastry School in Chicago and at the National Baking Center at the Dunwoody Institute of Minneapolis. He also holds a diploma from the International Pastry Arts Center in Katonah, New York, where he notably had the good fortune to study under the late Swiss pastry chef, Albert Kumin.
