As in all Marquis Who's Who biographical volumes, individuals profiled are selected on the basis of current reference value. Mr. Kim is the executive chef of Mizumi, a Japanese and Asian cuisine restaurant located in the Wynn Las Vegas hotel. Featuring a menu comprised of numerous flavorful foods, guests enjoy a large koi pond, 90-foot waterfall and Japanese garden while dining. Recognizing his expertise, he was the recipient of a Chef Hat Award in 2015. Mr. Kim subsequently received Michelin Stars in 2017 and a Forbes Five-Star in 2017.
Some of the secrets to Mr. Kim's success, he noted, has resided in properly training his staff, all of whom play an integral role in the kitchen. Additionally, when he is not busy preparing meals, he is involved in product sourcing to make sure all food is of good quality. Other responsibilities to Mr. Kim's credit include changing the menu, taking inventory and accepting deliveries, as well as ensuring that health code and hygiene standards are always properly met.
Garnering former expertise from working in five other countries, Mr. Kim relocated to the U.S. in 2020 after four years as the executive chef of the Wynn Palace's Japanese restaurant in Macau. He also spent several years affiliated with the Rockpool Dining Group, which is the largest restaurant and dining group in Australia and the Star Entertainment Group, another Australia-based gaming, entertainment and hospitality service company. Mr. Kim also gained exceptional cooking experience in locations across Japan, South Korea and Singapore, as well as in South Korea as the owner of Nami restaurant, which had two locations.
Bearing a great passion for his work, Mr. Kim learned much from his father, who was also a chef and restaurant owner. While coming of age, he gained more exposure to the industry. Determined to follow his father's example, Mr. Kim credits much of his success on hard work and dedication. Among his future goals, he hopes to better promote Asian cuisine and publish a recipe book that highlights his favorite dishes.
Civically engaged, Mr. Kim volunteers much of his time through his hotel's community relations department, which participates in charity work throughout Las Vegas. He also donates to United Nations Children's Fund and the World Wildlife Fund. Mr. Kim received a diploma in hospitality administration and management at TAFE in New South Wales, Australia, in 2010.
