With more than a decade of experience in his chosen field, Dr. Sikalidis has earned distinction as an associate professor of nutrition at California Polytechnic State University (Cal Poly) since 2018. Bearing a particular expertise in the fields of metabolic science and type 2 diabetes mellitus (T2DM), as well as molecular nutrition, he has also conducted a wealth of research in the areas of obesity and cancer, as well as in amino acid metabolism and molecular signaling. Before accepting his current role at Cal Poly, Dr. Sikalidis maintained involvement between 2013 - 2018 as an assistant/associate professor at Istanbul Yeni Yuzyil University, for which he served as a founding faculty member of the nutritional sciences and dietetics program.
In his capacity at Cal Poly, Dr. Sikalidis studies the nutritional utilization and byproducts valorization of agricultural products in the state of California, particularly in relation to applications for patients who live with diabetes. To this end, he has collaborated with AvoPacific Oils LLC, the largest avocado oil producer in North America, to establish the Avocado Nutritional Investigation Fund. Likewise, he has pursued a similar partnership with the Agriculture Research Institute's seed grant to study the effect of red raspberries in reducing the emergence of T2DM in patients. Moreover, Dr. Sikalidis has contributed extensively to the development of new methods for nutritional assessment and monitoring via artificial intelligence and machine learning, such as the Capacity Strengthening Undertaking-Farm Organized Response of Workers Against Risk for Diabetes (CSU FORWARD) project, which has received funding from the United States Department of Agriculture - National Institute of Food and Agriculture and entailed extensive cooperation between Cal Poly and Tufts University.
In 2020, Dr. Sikalidis provided his expertise during the development of the world's first wine-infused zero alcohol sparkling water drink, H2O Sonoma Soft Seltzer, an innovative health-focused ultra-hydrating canned water beverage.
Before embarking upon his professional journey, Dr. Sikalidis pursued a formal education at the Aristotle University of Thessaloniki, where he studied food science and technology and graduated with both a Bachelor of Science and a Master of Engineering in 2003. Following this accomplishment, he attended the University of California Berkeley, from which he received a Master of Science in molecular and biochemical nutrition in 2006. He subsequently received a Doctor of Philosophy in molecular nutrition and metabolism at Cornell University in 2010. After two years of service in the Hellenic Armed Forces of Greece, Dr. Sikalidis undertook a postdoctoral fellowship in immunology at the Dana-Farber Cancer Institute and served as a research associate at the Harvard Medical School between 2012 and 2013.
Well regarded for his expertise, Dr. Sikalidis has been certified in the fields of agriculture, food and nutrition by the Geotechnical Chamber of Greece and has maintained membership with both the American Society of Nutrition and the New York Academy of Sciences.
