A leader in the Baltimore hospitality community, Mr. Marsh is distinguished for his expertise as the owner of Heritage Smokehouse, a popular smokehouse restaurant. His culinary journey began at the age of 15, when he began working his first restaurant job; even at that young age, he was drawn to the creative and technical aspects of the food industry and saw a vibrant future for himself in the field. He was especially interested in growing his own food and collaborating with local farms to offer the highest-quality products.
In 2009, Mr. Marsh began working as a chef and butcher at Woodberry Kitchen, which shared his values for locally sourced foods. In this environment, he was able to gain invaluable experience by sourcing whole local animals and practicing old world style seam butchery to break them down. Five years later, he had advanced to the role of head butcher and executive chef of the restaurant, and he was recognized with a Rising Star Award at the 2014 International Chefs' Congress.
The next step in Mr. Marsh's career was opening a whole-animal butcher shop called Parts & Labor. Here he attracted a loyal following with his vast array of dry aged beef cuts, heritage breed pork, lambs, goats, poultry, housemade sausages, smoked meats, and salumi. However, the high cost of operations eventually led him to close the shop. In 2021, Mr. Marsh and his wife, Jen, a pastry chef, opened Heritage Smokehouse, fulfilling their long-held aspiration of owning an independent restaurant. The venture has been a tremendous success, receiving acclaim in publications such as the Baltimore Sun, Baltimore Magazine, Baltimore Fishbowl, Baltimore Business Journal, and Eater DC.
Mr. Marsh holds a diploma from C. Milton Wright High School and an associate degree in culinary arts. Looking back at his career to date, he attributes his successes to his work ethic, drive and passion for his craft. Outside of work, he enjoys spending time with his family, including his wife and two sons, ages 14 and 12.
