Mr. Gotay is the head chef and owner at Babalu New York in Huntington, a Cuban Mediterranean bistro with Latin-inspired cuisine. Establishing his eatery in 2017, he offers an extensive brunch menu on Saturdays and Sundays featuring bottomless mimosas, a full dinner menu with a large selection of tapas, full plates, salads, and side dishes, as well as a prix fixe menu and take-out menu.

As he continually progresses in the industry and acquires more clientele, he also aims to expand his footprint in Puerto Rico, where he has spent many summers.
Having graduated as the valedictorian at the Star Career Academy in 2014, Mr. Gotay notes that the recognition led him down a successful path with some fantastic opportunities. Among several notable roles, he worked with Michelin Chef Michael Psilakis and Celebrity Chef Michael Ginore in 2015 and Michelin Chef Michele Brigioni and Celebrity Chef Bobby Flay in 2017. Mr. Gotay also garnered recognition and expertise as a line cook at Bar American and The Boxing Chef.
Before pursuing the hospitality sector, Mr. Gotay was a professional boxer for over five years. He began following the sport when he was 16 in high school, fighting as an amateur before becoming a pro in 2012 at age 22. While boxing, Mr. Gotay began learning the importance of nutrition and healthy eating, ultimately inspiring his career as a chef years later. Following in his father's footsteps, a renowned martial artist, he is known as a 10th-degree red belt, grandmaster sensei in karate, and a fifth-degree black belt in judo.
Mr. Gotay was notably nominated for inclusion on the Town of Huntington's 30 Under 30 list in 2017, the same year his restaurant opened. He also received an Award of Achievement for his work in his local community.
Mr. Gotay attributes his success to the work ethic he learned from his parents while coming of age. He is also very grateful to his mother for helping him fund his restaurant.
