Backed by her considerable experience in food science and technology, quality assurance, food safety, and more, Dr. Kunadu presently excels as a senior lecturer at the University of Ghana and as a postdoctoral research associate with the Texas A&M University. Through the latter, she conducts research on the microbiological safety of fresh produce consumed raw or minimally-processed. As a senior lecturer at the University of Ghana, Dr. Kunadu teaches undergraduate and graduate level courses on food microbiology, biotechnology, safety, and quality assurance. Similarly, she has developed a number of courses, including "Hygienic Plant Design, Equipment, and Scale Up in Food Processing" and "Food Safety Standards, Regulation, and Quality Assurance," and supervises her students' research projects.
Over the years, Dr. Kunadu has worked as research fellow at the University of Cambridge and as a deputy QEOSH (Quality, Environment, Occupational Health and Safety) manager for Equatorial Coca-Cola Bottling Company, where she maintained compliance with all plant quality, food safety, environment, and occupational safety and health requirements in Coca-Cola Bottling Plants in Algeria and West Africa. Similarly, she oversaw all safety and environmental inspections, and provided technical support to resolve practical issues that have an impact on food quality and safety. During the early stages of her career, Dr. Kunadu gained valuable expertise in food research through the University of Pretoria, the Food Research Institute, and the Tshwane University of Technology.
An expert in her field, Dr. Kunadu earned a Bachelor of Science in cell biotechnology from the University of Alberta in 2003. Subsequently, she expanded upon her professional knowledge, earning a Master of Science and PhD in food science from the University of Pretoria. She aligns herself with such organizations as the International Association of Food Protection, the Society for Applied Microbiology, and the African Organization for Standardization. Due to her outstanding breadth of knowledge, Dr. Kunadu has contributed to numerous projects, including "Hazard Characterization and food safety risk associated with Salmonella on dressed chicken carcasses in Accra, Ghana" and "Capacity Building on safe food handling and Implementation of Good Hygienic Practices," and contributed significantly to national and regional technical committees on food quality and safety.
In light of her professional accomplishments, Dr. Kunadu won the Postgraduate Student of the Year Award from the South African Society of Dairy Technology, the Young Scientist Award from the International Union of Food Science and Technology, and the African Woman in Agriculture Research and Development Fellowship Award. More recently, she won a Top Fellowship Award through the Cambridge-Africa Partnership for Research Excellence. While her career has been filled with highlights, she takes the most pride in her plenary participation as a global expert in the FAO/WHO/WTO International Food Safety Forum, which was organized by the United Nations. She attributes her success to God, her network, her mentors, and her family, who have all been very supportive of her work. Looking forward, Dr. Kunadu aims to continue her research and make more of an impact in the field of food microbiology and safety.
