Mr. Amaya's culinary journey began when he was just 15 years old in his grandmother's restaurant. He quickly rose through the ranks to run a kitchen by 16 before moving to Laredo, Texas, where he cooked for different kitchens. His talent was recognized by Eateries Inc., which sponsored his culinary education at The Art Institute of Dallas in Texas from 1991 to 1993. After graduation, he became a corporate trainer and traveled the country, opening restaurants for them.

His commitment to giving back to the community has earned him three prestigious awards, including a special tribute award signed by the Governor of Michigan for his work with the teen homeless initiative.
Outside of his career, Mr. Amaya is passionate about modernizing classic dishes using contemporary techniques. This love for innovation extends beyond the kitchen into his future plans. In the coming years, he aims to pass on his wisdom and experiences to the next generation of chefs through talks and mentorship at his teaching restaurant, where he currently employs five culinary students.
