His day-to-day responsibilities include overseeing all culinary operations, managing an à la carte restaurant that serves three meals a day and a cafe and snack bar that also operate daily. His expertise in country club offerings has been recognized throughout his career, which also includes roles as an executive chef at Sycamore Hills Golf Club from 2020 to 2023 and an executive sous chef at Fiddlesticks Country Club Inc. from 2016 to 2020, where he helped infuse a resort-style dining experience into the club environment.

Mr. Capua's culinary journey began at Hammock Beach Resort, where he held the position of chef de cuisine from 2015 to 2016 after serving as sous chef from 2012 to 2015. His passion for cooking was ignited during his high school years, when he worked at a frying station on the oceanside at just 16 years old. Having grown up in an Italian family that cherished cuisine, he was able to learn from his father served as an initial mentor in the kitchen. After pivoting into the marine industry to serve as an amphibious assault vehicle (AAV) crew chief with the United States Marine Corps from 2008 to 2014, he returned to Florida to pursue his dreams in the culinary realm.

Academically, Mr. Capua's educational background includes coursework in culinary arts through an American Culinary Federation apprenticeship at First Coast Technical College, which he completed in 2017. To augment his knowledge and qualifications, he obtained a Worldchefs certified executive chef certification and an executive club chef certification from Club+Resort Chef in 2024. Additionally, he holds WSET level 1 and level 2 certifications from the Wine and Spirit Education Trust.

Mr. Capua attributes his success to his ambition and guiding principle that one's actions resonate permanently. He is committed to leaving a meaningful legacy through sustainable practices and believes that contributing positively to the world brings good returns. As a writer, blogger and keynote speaker at conferences, he continues to give back to others by sharing his insights and experiences. His outstanding contributions were recognized with the Chef's 40 Under 40 award from Club+Resort Chef in 2024.

With a dedication that extends beyond personal gain, Mr. Capua is focused on making the world a better place through innovative approaches in the private sector. He is actively involved in civic-minded organizations such as Volusia County Toys for Tots and the Love My Neighbor Foundation and hosted Blessings in a Backpack events from 2020 to 2023.

Outside of his professional life, Mr. Capua is a proud husband and father and enjoys traveling, sports and writing in his spare time.
