Ms. Pearl has five years of experience in the restaurant industry, with two years as the founder and president of Louise Sans Gluten Free. As a consultant, she specializes in advising restaurant and food market owners on gluten-free products, recipes, menus, and substitutions. She has also developed a restaurant training program for restaurateurs wanting to learn how to produce safe, gluten-free meals for their customers who have Celiac disease, gluten sensitivity and also for those who follow a gluten free diet for other needs. This program is specifically designed to help restaurants large and small, restaurant chains, hotels, caterers, extended care facilities, hospitals, senior citizen residences, daycares and all other food providers get the appropriate training and information enabling them to produce and serve delicious gluten-free meals.

Ms. Pearl owns the first and only gluten free grocery store and bakery in Montreal. She is a consultant in the gluten-free industry, working with manufacturers and restaurants looking to offer safe gluten-free meals and products. She attributes her success to her passion for educating the public on Celiac disease and gluten-free eating and lifestyle. She became involved in her profession because she was diagnosed with Celiac disease and, due to having a passion for cooking and fine dining, she was determined to read and educate herself on the disease. Ms. Pearl received a bachelor's degree in psychology and marketing from McGill University. She is the president of the Quebec chapter of the Canadian Celiac Association.
