Irina Zlatkina is a mother of four, the founder of Shiny Spoons - so named because when you eat something you truly enjoy, you lick the spoon until it shines - and has developed a sinfully delicious line of desserts that are perfect for people with extreme dietary restrictions.
They're healthy, gluten free, soy free and vegan, but are foodie worthy in flavor, texture and appearance. Dark, Dark Chocolate dessert, for example, is smooth, creamy, light and rich, that was such a resounding success that it's difficult to believe it wasn't made in traditional fashion. Buckwheat was chosen as the base for the recipe because of its pleasant flavor and numerous health benefits.
Shiny Spoons desserts are currently in 45 Whole Food Stores, but Irina is launching a Kickstarter campaign in hopes of putting her desserts on every grocery shelf, in order to make them more affordable and readily available to everyone with diet restrictions.
Zlatkina was born and raised in Odessa, Ukraine, on the shore of the Black Sea, where her passion for fresh fruit and vegetables was nurtured in the farmers markets that are a colorful and vibrant patchwork quilt of produce, meats and cheeses.
She and her husband moved to the United States in 2000 and in 2006 became parents to identical twin daughters. The babies suffered Twin to Twin Transfusion Syndrome, a rare event that left daughter Maria in the special care unit for 10 days, and Sofia in John Hopkins' ICU NICU for the first four months of her life. Sophia suffered End Stage Renal Failure, which led to a feeding tube, daily dialysis, and numerous visits to the emergency room. Sofia would eventually undergo a successful kidney transplant in 2011.
Through Sofia's challenging childhood, Irina learned to pay close attention to the ingredients used in her home kitchen, and the healing properties of various foods.
She tells a compelling story of the bond with her husband and daughters that was only strengthened through the multiple visits to the emergency room, and the inspiration she drew from the "BELIEVE" campaign in her hometown of Baltimore at that time. The campaign's purpose was to inspire residents of a city plagued by drugs and violence, but Irina made the campaign her own. "Believe" was a simple word, but it meant so much.
