Ray Boakes has been Named an Executive of the Year in Food Service, Supply & Distribution

With nearly three decades at the head of his own business, Mr. Boakes has served as the CEO of Southern Salads for the past eight years. The $32 million empire, which was founded humbly with the support of a $15,000 bank loan, produces freshly prepared salads, vegetables, slaws and fruit for the food service, food manufacturing and travel sectors. Mr. Boakes became involved in the niche fruit and vegetable business upon observing the widespread use of shredded iceberg lettuce at McDonald's restaurants. At the time, the company's U.K. locations were not yet using the product, but he felt strongly that it wouldn't be long before they followed suit. Mr. Boakes seized the opportunity and began supplying shredded iceberg lettuce to the fast food giant, and the rest - as they say - is history. Impressively, Southern Salads is projected to grow to a $70 million company in the next four years.

Mr. Boakes provides Southern Salads with strategic positioning in the U.K., and creates strategies for further business growth. In addition, he handles and oversees pressing financial matters related to company operations.

In recognition of his success, Mr. Boakes was honored with the Kent Manufacturer of the Year Award in 2014, as well as a Yum Award. He completed coursework in technical studies, and is affiliated with BSI, Investors in People, and LEAF (Linking Environment and Farming).
