Founded in 2010 by Owner and Chef Eileen "Mille" Lee Baldwin, Eloise's Pastries was created as a way to give back to her community. Boasting a lifetime of experience in the kitchen, Baldwin began baking alongside her grandmother when she was just a child. Later forming a children's party planning business where she would bake themed cakes and cupcakes for parties, she then spent time overseas where she continued to bake, absorbing desserts and ideas from all over the world. When she returned, her skills and interest ever evolving, she decided to go into business for herself once more, this time opening the doors to her pastry shop.

Baldwin doesn't believe in necessarily hiring team members who are trained in the field, instead, she says, anyone with a creative nature and passion to learn can be trained. And while many of her recipes are handed down from previous generations, a level of creativity in overall appearance is something she cannot teach.
