Highlighting fresh, seasonal ingredients sourced from local sustainable farms, Prairie Grass Cafe's creations are fresh and delicious. From hearty brunch favorites to light and healthy fare and everything in between, and with chef-owners Sarah Stegner and George Bumbaris at the helm, there is something to satisfy any type of brunch craving.

Although the menu is large, it is organized into subcategories that make finding the perfect dish easy. For a more breakfast-y brunch, Prairie Grass Cafe delivers with its selection of benedicts, omelets and pancakes. Served with breakfast potatoes, benedict options include the Signature PGC Benedict ($12), two poached eggs over sauteed spinach, topped with crumbled bacon and served with roasted tomato hollandaise sauce; Smoked Salmon Benedict ($15), two poached eggs, smoked salmon, English muffin and hollandaise; Traditional Benedict ($10) with Canadian bacon and hollandaise; and a Portobello Mushroom Benedict ($14) low carb diners will love. Two panko crusted Portobello mushrooms replace the English Muffin and are topped with spinach, a poached egg and hollandaise sauce for a satisfying and guilt-free dish.

The brunch omelets are generous and fresh, with a variety of tasty options, prepared with the highest quality ingredients. The Mediterranean ($10.75) features feta, tomato, spinach and onion; the Denver ($10.75) includes smoked ham, cheddar, onion and green pepper; and the Local Omelet ($11.50) with farmer eggs, River Valley Ranch mushrooms and goat cheese. Or, Create Your Own Omelet ($10.75) with a choice of any three ingredients: ham, bacon, Ancho Sausage, green pepper, onions, mushrooms, spinach, broccoli, cheddar, Swiss cheese, mozzarella or feta. Additional ingredients are $1 each. Local egg whites are an additional $2. Goat cheese is available for an extra $3. All omelets are served with choice of breakfast potatoes, sliced tomatoes or mixed greens and choice of white, wheat or rye toast.

For those with a sweet tooth, the restaurant's pancakes deliver. Light, subtly sweet and tangy, the Lemon Ricotta Pancakes ($12) is served with real maple syrup and whipped butter--or go all out and top them with raspberry sauce and Creme Anglaise ($17) for a memorable treat. The homemade buttermilk pancakes are always a favorite. Choices include Chocolate Chip ($11), Fresh Blueberry ($12) and Buttermilk Pancakes ($10).

Guests who prefer to enjoy brunch a little later in the day will appreciate the extensive "lunch" section featuring signature dishes like the Sauteed Lake Superior Whitefish ($25) with roasted heirloom carrots and pistachios in a lemon butter sauce; Golden Browned Chicken Cutlet ($18) with lemon-caper sauce and potato wedges; and the Chicago Magazine #1 Sirloin Burger ($16) with mild blue cheese topping, warm beefsteak tomato and potato wedges. Deemed the best burger in Chicago by Chicago Magazine, Prairie Grass Cafe's Sirloin Burger is served bun-less because it is so thick and juicy it doesn't need one (for burger purists, delicious artisan buns are available upon request).

Sandwich options include the "North Country" Ham and White Cheddar Sandwich ($11) on Panini bread with Black Mission Fig Jam and a mixed green salad; Traditional Tuna Melt ($12.5) on a toasted English muffin served with French fries; and Tuna Salad Sandwich ($9) served on honey-wheat bread and paired with a mixed green salad.

The salads are just as enticing, and include an Asian Citrus-Chicken Salad ($14.50) with romaine lettuce, toasted peanuts, cilantro, grapefruit and fried wontons tossed in ginger-soy vinaigrette; Cobb Salad ($14) with grilled chicken, bacon, blue cheese, avocado, tomato, egg and traditional cobb dressing; and Organic Mixed Greens ($6 half/$10 full) with apples, walnuts and crumbled blue cheese tossed in balsamic vinaigrette. Add chicken for $6.

Pulling from the best of breakfast and lunch are the PGC Specialties. Lox lovers will enjoy the Traditional Smoked Salmon Plate ($16) with tomatoes, marinated red onions, cucumbers, capers, cream cheese and a toasted bagel while those wanting something a little more meaty will savor the Ancho Marinated Skirt Steak ($27) served with two eggs any style, breakfast potatoes and choice of toast. A Half Skirt Steak option is available for $18.50. Other dishes include Chiliquiles ($10) topped with two eggs any style, guacamole and sour cream; "Potato Skins" ($12) stuffed with scrambled eggs, cheddar cheese, crumbled bacon, scallions and sour cream; Prairie Breakfast ($10.50) featuring two eggs any style, homemade Ancho Chile spiced sausage, breakfast potatoes and choice of toast; Texas French Toast ($9); and the Egg White Omelet ($12.50) with mushrooms, tomatoes, jalapenos, onion, green pepper, avocado and Pico de Gallo.
